RESEP ROTI GANDUM HOKAIDO - WHOLE WHEAT HOKAIDO LOAF RECIPE

this is one of my fav wheat bread recipe, its soft and milky. 

really love making this particular bread... lembut bangeeet!! 

Since I have bread maker, I am determine to create a one soft and yummy wheat bread recipe, therefore I just simply use the thang zong technique in making this bread. 

kenapa pake teknik thang zong? simply karena dengan adonan thang zong, roti tersebut akan menyerap air yang lebih banyak and jadinya akan lebih lembut hehehe 

BAHAN THANG ZONG / THANG ZONG INGREDIENTS : 
1. 40 gr tepung terigu / flour 
2. 220 ml air / water 

CARA BIKIN THANG ZONG / HOW TO MAKE THANG ZONG : 
1. campur air dengan tepung, lalu masak dengan api kecil sampai meletup-letup, matikan api, dinginkan terlebih dahulu dan thang zong siap digunakan 
1. Mix water and the flour on a saucepan, cook it with low heat and stir it until it became lumpy, turn off and let it cool off then its ready to use 

BAHAN ROTI GANDUM HOKAIDO / INGREDIENTS FOR WHOLE WHEAT HOKAIDO LOAF : 
1. 270 gr tepung protein tinggi / white bread flour 
2. 270 gr tepung gandum utuh / whole wheat flour 
3. 1 sdm susu bubuk / 1 tbs milk powder 
4. 90 gr gula halus / caster sugar 
5. 1.5 sdt garam / 1.5 tsp salt
6. 4 sdt yeast / 4 tsp yeast 
7. 2 telur kecil / 2 small eggs or you can just use 1 big size egg 
8. 60 ml liquid whip cream 
9.  50 ml susu cair / fresh milk 
11. 50 gr butter melted 
10. 190 gr thang zong dough 

CARA BIKIN DENGAN BREAD MAKER / HOW TO MAKE WITH BREAD MAKER : 
1. masukan bahan basah terlebih dahulu, beurutan sesuai dengan ketentuan masing2 brand bread maker. tapi biasanya gue taro thang zong dulu abis itu masukin susu, whipped cream, garam, telur, butter, tepung terigu putih, gandum, susu bubuk, gula, dan terakhir adalah yeast. 
1. put the ingredients based on the BM manufacturer instruction, usually are the wet ingredients first (according to order are thang zong, eggs, milk, whipped cream, butter and then the dry ingredients which are salt, flour, wheat flour, sugar, milk powder and yeast 

2. lakukan 2 kali pengadonan, lalu matikan dan pilih menu bake bread masak selama 40 menit, kalau bread makernya kecil, boleh dibagi dua adonannya yah karena ini ukuran roti yang besar banget nanti takutnya ketinggian 
2. knead the bread 2 times, and then let the bread rise for about 40 minutes and then choose the menu to cook bread for 40 minutes, oh ya if you have small capacity for your bread maker, you might want to half the dough because this recipe is for a big bread loaf and will rise high up :) 

CARA BIKIN MANUAL / HOW TO MAKE BREAD WITH HANDS : 
1st STEP 
1. siapkan wadah, campur tepung terigu, tepung gandum, gula, susu bubuk dan yeast lalu aduk merata dan masukan thang zong lalu remas dengan tangan sampai tercampur setelah itu masukan telur, susu dan whipped cream uleni sampai tercampur rata dan terakhir masukan butter dan garam. uleni sampai tidak lengket boleh tambah tepung terigu bila masih terasa lengket, lalu diamkan selama 40 menit sampai adonan mengembang. 
1. prepare a big bowl, mix bread flour, wheat flour, sugar, powder milk and yeast. And then add the thang zong into the mixed dry ingredients, mix it with hands and then one by one add the wet ingredients as following : eggs, milk and whipped cream. after it all mix nicely next are adding the butter and salt. mix the dough until its not sticky in your hands, if it still feels sticky you can add more flour. 
leave the dough for 40 minutes it rise up. 

2nd STEP : 
2. pukul adonan yang mengembang dengan tangan sampai kempis lalu bagi dua dan giling dengan roller sekitar 10x (tujuannya adalah mengeluarkan udara yg ada di dalam adonan roti), lalu siapkan loyang dan bentuk roti sesuai selera dan diamkan selama 30 menit sebelum dimasukan ke dalam oven yang sudah dipanaskan terlebih dahulu 
2. punch the dough until its flat, separate into half and roll the dough using a rolling pin to let the air on the dough out, about 10x. 
after that prepare a baking tray and shape the dough into bread any shape you like, leave for 30 minutes to rise again before bake. 

3rd STEP : 
3. masukan roti yang sudah dibentuk ke dalam oven yang sudah di panaskan, dengan suhu 200C selama 20-30 menit 
3. bake the dough on a pre heated oven for 20-30 minutes in 200C
